Ingredients

Adjust Servings:
**Butter Sponge**
125g unsalted butter softened
260 plain flour, sifted along with baking powder
220g caster sugar
3 1/2 tsp baking powder
1/2 tsp vanilla extract
3 eggs, room temperature
125ml milk (full cream)
**Chocolate Coating**
300g of dark chocolate buttons
100ml thickened cream
100ml milk (full cream)
**Decorating**
1/2 cup desiccated coconut
1/4 cup strawberry jam
1 cup thickened cream
2 tsp caster sugar
1/2 tsp vanilla extract

Super delicious Lamington is a great way to celebrate Australia Day with sponge cake coated with dark chocolate and dusted with desiccated coconut, topped with strawberry jam and whipped cream. Have it as a dessert or snack!

Directions

  1. Preheat oven to 180C or 160C fan-forced.
    Sift the flour and baking powder, set aside until required.
  2. Grease a 20 cm x 30 cm baking tin, lined with baking paper.
    Place the butter, sugar, and vanilla in a mixer and beat until the mixture is fluffy.
  3. Add the eggs one at a time and beat well, until the batter is smooth.
    Add half the flour and gently fold to combine, then stir in half the milk. Repeat with remaining flour and milk.
  4. Pour the batter into the prepared cake tin and bake for 25 minutes, until a skewer is inserted into the center comes out clean. Stand for 5 minutes then turn the cake onto a wire rack and cool completely.
  5. Once the cake is cooled, cut the cake into squares, and freeze for an hour before coating, this will help to get the coating easily onto the cake.
  6. Heat the milk and the thickened cream, once it reaches the boiling point, remove from the heat, and pour over the chocolate buttons. Let it stand for a couple of minutes, then mix well until all the chocolate buttons are melted.
  7. If it is too thick you can add warm milk and mix to have the pourable consistency.
    Place the thickened cream, sugar, and vanilla extract in a bowl and whisk until the cream comes to a stiff peak.
  8. Remove the cake from the freezer, dip it in the chocolate coating, and dust off with desiccated coconut.
    Slice the cake into two, then spread strawberry jam on one piece then pipe in some whipped cream sandwich the cake slices together, and enjoy with a cup of tea or coffee.
