3.5kg Ham rind removed
4 Cinnamon Sticks
8 Star Anise
3 Dried Red Chillies
500ml Orange Juice
3 cups Brown Sugar
120ml Pomegranate Molasses
180ml Honey
Orange rinds from 2 oranges
3 Oranges peeled, thinly sliced, and patted dry
3 Blood Oranges peeled, thinly sliced, and patted dry

Ham is always a centerpiece for the Christmas table. Spiced Pomegranate & Orange Glazed Ham is very simple to make and it is super delicious that the whole family will fall in love with. Pomegranate Molasses tenderize the meat and at the same time adds depth of flavour to the Ham.

Directions

  1. Preheat the oven to 180 degrees Celsius. Place the cinnamon sticks, star anise, dried chillies, orange juice, brown sugar, honey, pomegranate molasses, and orange rind in a medium-sized saucepan and bring it to boil.
  2. Stirring constantly to dissolve the sugar. Cook for 5 minutes until the glaze is syrupy.
  3. Place the Ham on a greased wire rack in a large roasting tray lined with aluminium foil. Remove the ham from the oven every 20 minutes and brush it with the glaze. Do this process depending on the size of the ham (2kg – 3 times).
  4. Once the ham is fully cooked, remove it from the oven, brush with glaze and layer with orange and blood orange slices, overlapping slightly. Carefully brush again with glaze.
  5. Using a blowtorch and smoke the orange slices, this will give a smoky flavour to the ham and taste delicious with burnt orange slices.
  6. Slice the ham and serve with leftover glaze as a sauce.
  7. If you don’t have a blowtorch, place the ham in the oven at 200 degree celsius for 5 minutes once you have layered the orange slices.
  8. You can also use toothpicks to help secure the orange and blood orange slices.
